Culinary Arts Production Manager Reporting Relationships: Reports to the Superintendent, Assistant Superintendent, Director of Professional Services, and Culinary Arts Coordinator and Instructors. Major Job Duties: Planning and preparing for specialty events including annual planned events and supervision of food production in The Terrace restaurant and The Skywalk snack bar Qualifications: Experience in the Food Service industry or culinary management required. Ensures proper safety and sanitation in the kitchen. Must have excellent communication and customer service skills. Bachelors degree preferred or related culinary arts certification and valid Oklahoma drivers license required. A good work-attendance history is a must. Working Relationships: Must maintain rapport with full-time instructors and administrators as needed to carry out job responsibilities in a professional manner. Must be willing to work in a team environment and contribute to the goals and missions of the program. 1. Responsible for the supervision of the Culinary Arts Assistants of the Terrace and Skywalk. 2. Responsible for the assignment and supervision the food preparation, including baking, frying, broiling, boiling, steaming and sauting using various cooking methods and techniques. Other duties may include preparing cold food; including decorating trays, salads, garnishes, baking, desserts and salad bar. 3. Demonstrates specialty cooking methods to Meridian Technology Center students for training purposes as requested by the Culinary Arts Instructors. 4. Supervise the planning of menus, production sheets, purchasing of food supplies, portion control and rotation of supplies, Assist in analyzing food and production cost to determine menu price for the Terrace and Skywalk. 5. Responsible for Culinary Arts Assistants scheduling and time cards. 6. Responsible for food service on the buffet lines; set-up, service and break down and the rotation and utilization of food, garnishing and presentation. 7. Responsible for event sheets and the planning and preparing for specialty events. 8. Must be able to work extended hours and additional days/evenings as required by position responsibilities. 9. Must be able to occasionally lift and carry items weighing as much as 25 pounds and carry up and down stairs (full ice chests, cases of pop, full coffee pots) and/or push items weighing up to 50 pounds on a dolly or cart.. 10. Perform related duties as assigned. Standards of Performance: The Culinary Arts Production Manager will be evaluated on the previously listed responsibilities to determine satisfactory performance. These evaluations will determine salary increases and career advancement possibilities. Contract Length: 12-month position Available: Immediately Salary: Negotiable
