Program Technician I - Meat Laboratory Manager

Description:
Training and Qualifications: Minimum requirement of a B.S. degree in Animal Science, Food Science, or closely related field. Experience with animal slaughter/carcass fabrication and plant sanitation, as well as a basic understanding of animal/meat/food science data collection, will be required. The successful applicant must also be HACCP trained (certified preferred) and capable of self-instruction.

Responsibilities:
The individual will manage the daily operations at the University of Arkansas Red Meat Research Abattoir, with emphasis on Abattoir sanitation, Abattoir and equipment maintenance, and inventory, as well as animal slaughter, meat fabrication and processing, packaging and preservations, and research data collection. Additionally, the individual will be responsible for maintaining compliance with the Abattoir's standard sanitation operating procedures (SSOP) and hazard analysis and critical control point (HACCP) plans. As the manager of the Abattoir, the individual will be expected to be active in meat science research, assisting with scheduling research projects at the Abattoir and the collection of fundamental meat quality, yield and safety data. The successful applicant may assist the project leader in writing grant proposals, project reports and manuscripts, as well as possibly making presentations at regional and national scientific meetings. The employee will be under direct supervision of a department meat scientist.

Department and Facilities:
The Animal Science Department consists of 26 faculty in research, teaching, and extension. Meat science and muscle biology research emphasis is on factors affecting the quality, yield and safety, as well as subsequent cooked meat palatability, of beef, pork and lamb. Meat research facilities within the Department of Animal Science include a USDA, FSIS inspected abattoir, meat chemistry laboratory, meat cookery laboratory, biohazard-2 microbiology laboratory, and a meat display laboratory. The Department of Animal Science offers both M.S. and Ph.D. programs in Animal Science.
